Kitchen Bonding with My Terrible Two!

My son seems to be growing up a lot like his dad.  Well, aside from the very obvious fact that he's got Ronnie's tantalizing eyes and sweet smile, Rafa has also shown great interest in cooking, baking, and making smoothies -- an attitude which is most definitely NOT from his mom, whose kitchen skills still need a lot of improvement.

I know that I am not the "wife-material" type of woman every eligible bachelor is looking for.  Honestly, until now, I still cannot help but wonder how come Ronnie chose to marry me when he knew for a fact that I do not even know how to cook.  Well, I suppose his love for me is much greater than his love for food.  Lol!

Please, don't feel sorry for my husband!  I may not be an expert when it comes to working in the kitchen, but let me assure you that I am doing my best to feed him a hearty and healthy meal every single day!  Thanks to the powerful World Wide Web which gives me a multitude of recipes to choose from.  Indeed, this modern age of information technology has really made learning new skills (like cooking) a lot easier!

Among all the food blogs that I have encountered in my cooking journey, I find Gina's as my ultimate favorite.  It's actually my go-to website whenever I wanted to cook something special for my family -- be it breakfast, lunch, dinner, or dessert!  Being the novice and trying-hard cook that I am, I find her blog the most helpful for it provides the exact measurement of all the ingredients (including salt and pepper) needed for each dish.  Not to mention her recipes are low in fat and calories, perfect for a health-conscious mom like me!

Aside from her certified delicious and healthy dishes, I must confess that I also like how her blog offers a few simple and easy-to-prepare recipes, just like this Chewy Chocolate Chip Breakfast Cookie that Rafa and I love to bake.  This healthy cookie has three ingredients only, which makes it an ideal bonding activity for you and your toddler!

Looks like I'm going to have a master chef in the future huh!  Anyway, allow me to share with you some of Rafa's photos while he's busy working on our cookies:

Step 1.  Mash 2 ripe bananas

Step 2.  Add 1 cup of uncooked quick oats and mix

Step 3.  Measure 1/4 cup of chocolate chips...

...and pour over the banana and oatmeal mixture and fold until well blended.

If you like, you may have a taste of the chocolate chips too!

Step 4.  Scoop 1 tbsp of  cookie mixture and place on a baking tray

Step 5.  Bake at 180 degrees Celsius for 15 minutes

Dig in!

Skinnytaste's Chewy Chocolate Chip Breakfast Cookie

    • 2 medium ripe bananas, mashed
    • 1 cup of uncooked quick oats
    • 1/4 cup chocolate chips

Preheat oven to 180°C.  Spray a non-stick cookie sheet with cooking spray.  Combine the mashed bananas and oats in a bowl. Fold in the chocolate chips and place a tablespoon of each on the cookie sheet.  Bake 15 minutes.
